| Our
Kentucky Oak Wine
Barrels are made from
furniture quality extended air-dried white oak cut in Kentucky
stave mills. The stave mills pick the best and oldest woods, to blend
the oaks
creating a consistent product that customers the world over have come
to know and appreciate. Kentucky stave mills obtain the tightest-grained logs in Kentucky and surrounding states. The staves and heading are then air-dried where the abundant Kentucky rainfall and the sharp contrast between hot, humid summers and cold, dry winters ensures full seasoning of the oak. Once the oak has achieved optimum air drying, they then toast the barrels slowly over oak chip fires to attain a deep, penetrating, toast level. As they are assembled, each barrel is inspected by the entire staff of coopers. This multi-step process ensures quality top before shipment. These beautiful barrels are truly furniture grade works of art. They are 225 liter Cooper's Select Bordeaux, 36.75 inches tall, 22.7 inches in diameter on the ends and 26.8 inches in diameter in the middle, with six double riveted galvanized steel hoops. | Our
new barrels are ready to fill immediately upon receipt. If you will not
be filling the barrel immediately, be sure to keep it in a cool place.
Avoid storing empty barrels in excessively moist places as this may
allow mold to develop. The barrels will be shipped with protective
wrapping, unwrap the barrels as soon as they arrive. Since the wood
will immediately absorb any liquid placed in the barrel you may want to
rinse the barrel out with water before filling. Rinsing is a simple
process. We recommend the following method: Fill the barrel with
approximately two gallons of warm water for 15-20 minutes. Swirl the
water around in the barrel to ensure maximum contact with the wood.
(You may also vary the water temperature and the amount of time you
soak the barrel. The keys to remember are that hot water will extract
oak flavors quicker than cold, and that more oak flavor will be
extracted from the wood the longer the barrel is soaked. What should I do if my barrels have dried out ? Barrels may dry out during storage in an excessively dry or drafty area. If the barrels are slightly dry, they do not need to be filled with water as the wood will recover its shape in contact with the wine. Rinsing is, however, recommended. If the seams between the staves have slight gaps, it is recommended to fill the barrel half-full with hot water (40°C) and stand to soak it on each head for 4 hours. It is then ready to be filled. If the barrel is completely dried out, start by putting water on the outside of the barrel heads and allowing the wood time to swell. Turn the barrel over after 4 - 8 hours, depending on the extent to which it has dried out, and do the same on the other head. Then fill the barrel with water and leave it for 1 - 2 days. Both operations may be carried out at the same time and 0.5 or 1 % sulfite solution may be used |
